CHIPS & CHEESE DIP

Start by deep frying white corn tortillas (cut into chip size) while you melt 1 pound of block cheese then splash your chunky salsa in and your done.

TACO MEAT

Brown 1 pound of ground beef and onions, drain grease.  Add about 3/4 cup of Casa Silguero's Red Salsa.  Serve on corn or flour tortillas, add a little salsa then top with lettuce, tomatoes, and cheese.  You can also add refried beans and make burritos

RECIPES

Add 1 tablespoon for Hot or 2 tablespoons for Hotter of Casa Silguero's Big Mex Mix. Use 4-5 mesquite smoked or roasted green tomatillos with husk peeled and cored, then add one hand full of chopped cilantro including stems.  Blend to favored texture and enjoy!

CASA SILGUERO RED SALSA

REFRIED BEANS

Take 2-3 cups of last nights beans and blend until smooth. Then heat over medium for about 10 minutes, stir occasionally until the thicken up.

THE KILLER BEAN

Dice 2 slices of thick bacon and brown in a pressure cooker. Clean beans (check for rocks) then rinse and add to bacon; 12 cups of water, 1 tablespoon of garlic powder and 1 whole jalapeno. Place lid on pressure cooker and cook over medium-high heat for about 1 hour or until beans are soft.  Then mix 1/2 cup of Casa Silguero Salsa with 1/2 cup of water and add to the beans.  Stir in a large handfull of chopped cilantro and salt to taste.

Add 1 tablespoon for Hot or 2 tablespoons for Hotter of Casa Silguero's Big Mex Mix.  Add one 14.5 oz diced canned tomatoes.  (Make sure the can says tomatoes is the first ingredient.) Add one hand full of chopped cilantro including stems.  Blend to favored texture and enjoy!


HOT SAUCE

You start out by pouring 16 ounce's Apple cider vinegar, 6 ounce's  water, 2 table spoons of Big Mex mix and a 2 table spoon's of ketchup then blend and funnel into your favorite dashing bottle.(my new favorite)

THE RICE

Use 2 tablespoons of oil and brown 1/4 cup of diced onions and 1 cup of rice; add 3 cups of chicken broth and 1/2 cup of Casa Silguero's Salsa.  Cover and cook for 20 minutes or until rice is cooked and juices are absorbed.  Garnish with fresh cilantro and serve.

hamhock beans

Clean beans (check for rocks) then rinse. Add 12 cups of water, 1 smoke hamhock, 1 tablespoon of garlic powder and 1 tablespoon of Casa Silguero's Big Mex Mix to pressure cooker. Place lid on pressure cooker and cook over medium-high heat for about 1 hour or until beans are soft. Then mix about 1/2 cup of Casa Silguero Salsa with 1/2 cup of water and add to the beans. Stir in a large handfull of chopped cilantro and salt to taste..

GUACAMOLE

1 avocado and 1/2 teaspoon of Casa Silguero's Big Mex Mix. Mash to your favorite consistency.

CASA SILGUERO TOMATILLO SALSA

GREEN EGGS & HAM

Cook sliced ham in skillet and brown.  Saute thin sliced onion in butter then break two eggs over the onions and cook until over easy then flip eggs when ready.  Last pour one tablespoon of Casa Silguero's Green Salsa on top of the eggs.  Serve with ham, refried beans, and flour tortillas.
